Meal for a tired Saturday night!




 I think like mood phases we have food phases too, lol! These days I'm totally, madly obsessed with original flavors. I'm cutting down spices, literally cutting down, to devour the real savor of my food and thoroughly loving the process!

Today I prepared a quick meal of Baked chicken with honey garlic sauce. Without any prior marination, rubbed with olive oil ,coarse salt and dash of rosemary, this tender chicken with a generous drizzle of lemon n honey sauce was, simply succulent!
               
Baked chicken with honey and lemon sauce




Ingredients:

1. 500 g of  boneless chicken fillets
2. Coarse sea salt to rub
3. Olive oil or butter 
4. A dash of any of your favorite herbs ( I used rosemary, however you can use thyme, oregano, basil or whatever you prefer. This is optional though, you can omit this part .)



Method:

1. Preheat oven to 450 degrees F.
2.Wash chicken fillets and dry them with paper towel.
3. Smear chicken fillets thoroughly with olive oil and coarse sea salt. You can use butter, margarine or any other vegetable oil of your choice.
4. Sprinkle any of your desired herbs.
5. Line your baking dish with aluminium foil.
6. Place your chicken on the dish and bake for 20 minutes. 
Bake for a short time at a high temperature. Baking for 30 minutes at 350 degrees will yield dry meat. But baking for just 20 minutes at 450 degrees will result in delightfully juicy baked chicken breast, every time. 
While your chicken is in the oven, you can prepare honey and lemon sauce
I used recipe given on National Honey Board for my sauce. It's super easy and super taste enhancer.
Ingredients:

1/2 cup - honey
1/4 cup - lemon juice
1 Tablespoon - finely chopped fresh parsley or rosemary*
1/2 teaspoon - grated lemon peel
 Cayenne pepper, dash

Method:

Combine honey, lemon juice, garlic, parsley, lemon peel and cayenne in a small saucepan; mix well. Heat until mixture begins to simmer; do not boil. Remove from heat. *1 teaspoon dried parsley or rosemary may be substituted.
  • Your dish is now ready to be relished. I prefer to drizzle the chicken with a little sauce and to serve remaining along with it. It's wholesome combo with garlic rice and fruit n veggie salad.
  • * If you are a spice lover like my son then you can sprinkle crushed red pepper before baking.

  • Honey and lemon sauce goes perfectly with this fruit n veggie salad;
  • Roughly cut in julienne mango, apple, cucumber, onion and capsicum, one each.Lightly mix in a bowl. To keep it crisp n crunchy, add 1/4 cup of sauce right before serving.
